Basic Techniques
Cooking noodles in the truck can be done in the microwave or through the use of a water boiling jug.
Microwave: Place the noodles and seasoning in a microwave safe container. Pour in some water to just above or below the noodle line (depending on how much soup you want) and cook in the microwave for 3 minutes. Let sit for 2-3 minutes for the noodles to soak/steam.
Jug: Place noodles and seasoning in a container that won't melt when boiling water is added. Add boiling water to the container, cover and let sit.
Freezer bag Cooking: This is a technique the army uses in there meals. You can put meat, spices, onion, butter or oil in a freezer bag and add almost boiling water and leave it to sit in a heat safe container. When the food looks cooked it can be safely slid from the bag into the container.
I would recommend using pre-cooked meat with this technique. If you have pre-cooked meat stored in a freezer then defrost that meat and then add in sauted ingredients and let set for added flavor.

Ramen Breakfast Burritos
2 cups water
1 pkg ramen noodles, any flavor you like
1 egg, beaten
1/4 cup shredded cheese
hot sauce- (We use Franks)
flour tortilla
Bring water to a boil, add ramen. While ramen is cooking slowly pour in beaten egg, add seasoning packet (Cook for 3 minutes). Drain, reserving about 1 T. of water. Add cheese & Hot Sauce (to taste preference). Fill a warm flour tortilla, wrap and enjoy. This makes a fast, hearty breakfast on the go for 2 people.
Variations: substitute egg or add in a cubed baked potato (see Microwave section), add in ham, replace hot sauce with ketchup.

1 tbsp. olive oil or butter
1 can diced pineapple
1 lb diced ham
1 can red beans (optional)
1/2 cup fresh cilantro
Make up 2 packets of Ramen without the seasoning packet. Drain and set aside. in a small container or bowl put in butter/oil, pineapple (save the juice) and ham and microwave (borrow the truckstop's) for 4-5 mins. Mix the pineapple, the ramen and drained red beans (optional) and chopped cilantro along with the oriental seasoning packet into the pineapple and ham mix. Cook for a few more minutes until the sauce sticks to the noodles.

Once softened, wrap the noodles and vegetables in leaves of iceberg lettuce and garnish with sesame ginger dressing. To add protein to the meal, add in some tofu or chicken.

I actually made the real stuff at home before I knew what I needed to make it taste just right. When you make the broth, make sure it tastes to your liking before you pour it on the noodles, because you can still add spices and salt to it. You cook the noodles separatel
Serves 1
1 Packet of cheap ramen noodles
1 can of chicken or tuna drained
1 Tablespoon of ginger
1 teaspoon of garlic powder
1 Tablespoon Chilli Powder (optional for spicy)
Sliced canned mushrooms (drain and pat dry with a paper towel)
Diced or grated carrot
Boiled egg (Use my new microwave boiling recipe here)
Dried seaweed (kind of has a salty spinach flavor when soaked in broth - you can get it at Walmart in the asian section)
Boil the eggs and set aside.
Boil the noodles in plain water. Drain and set aside.
Make the broth and add the chicken or tuna,ginger, garlic powder, chilli powder, mushrooms and carrots and cook in the microwave for 3-4 minutes.
Slice boiled egg and arrange on top. Slice seaweed into long strips and add on top.
Variations:
Use alternative meats for different flavor (or tofu), seaweed can be replaced with salad spinach for a slightly blander flavor.
