An convection oven can be a sizable investment to put on the truck, but can really help make the truck feel like home. It also opens up a whole new realm of goods that can be made in the truck. Including baked goods such as biscuits/scones and cookies.

Cheese Toasties
Bread (for the number you wish to make)

ketchup or tomato or pineapple or olives or ham (whatever you would like)
Place bread slices on a baking sheet, put other ingredients on top and cover with cheese slices. Broil/ grill until cheese melts.

Basic Scone Recipe
3 cups flour
6 teaspoons baking powder
pinch of salt
1/3 cup of butter
1-11/2 cups milk
Sift flour, baking powder and salt into a bowl. Cut butter in until it resembles fine breadcrumbs. Add milk and mix quickly with a knife to a soft dough. Knead a few times. Lightly dust an oven tray with flour. Press scone dough out onto this. Cut into 12 even-sized pieces. Leave a 2 cm space between scones. Brush tops with milk. Bake at 375 F for 20 minutes or until golden brown.
The dough can be frozen in a freezer bag for use at a later date.

1 batch of plain scone mix rolled out flat
1 - 11/2 cups cinnamon sugar
1 stick melted butter
Side note: If you need to roll out the dough and do not have a rolling pin use either glad wrap, baking paper or just regular paper to stretch out the dough. If you don't have flour to help with the release from the top layer of any of the surfaces, gently use a knife to scrape the dough off.
Preheat oven to 375F. Make sure the dough is laid out flat on a sheet of glad wrap or paper. Melt the butter in the microwave and mix it into the cinnamon sugar mix. Spread the cinnamon sugar mix out onto the dough and use the layer of paper or glad wrap to roll the dough up, gently releasing any stuck parts with a knife. Bake in the over for 20 mins.

1 jar of spinach dip (DO NOT buy Wal-mart brand they have stalks in it which ruin the taste) - or make your own

Easy Enchiladas
1 pack of torillas
About 1/2 a cup of meat (or however much you would like)
Sourcream
Salsa (chip aisle of walmart) or picante sauce
Texas chilli style beans (can use other flavors for different taste)
Grated cheese (i recommend fiesta blend)

1)Preheat oven to 400F
2)Warm up the beans in a microwave safe bowl, following the directions on the can. Set aside. Chop up the meat to your liking. 3)Lay out the first tortilla on a flat surface and spoon onto the torilla a small amount of the beans, the meat, a couple of spoonfuls of sourcream, a couple of spoonfuls of salsa and put a small amount of grated cheese on top. Roll and place in a baking pan. Repeat until you have the desired number of enchiladas. 4)sprinkle with cheese and put in the oven. |
Variations: Cover with a can of chilli before putting in the over, cook and add in a few veges for added nutrition, Use BBQ beans and sauce for a BBQ style enchiladas.

1) In an 9 x 9 baking dish place the hamburger meat and 3/4 cups of water. Cook in the over at 350 f or 180 c until hamurger is no longer red. Stir ever few minutes. Mix in the pasta sauce.
2) In a microwave bowl place chopped velveeta cheese (can also be down in the oven with hamburger) a little garlic, and any other herbs. Cook on high for 2 minutes and stir. Repeat until cheese is well melted. Add in extra cheese of your choice.
3) In a 9x9 pan (you can use the same on as before), place lasagne sheets on the bottom of the pan. On top do a layer of hamburger and then a layer of cheese (or as much of a layer as the cheese will allow - small spoonfuls here and there are fine too). Repeat until you have reached the desired thickness.
4) Bake in oven at 350f or 180c for 40-50 minutes. It will be ready when you can stick a fork in the pasta and it feels soft.

This is one of the more complex dishes I have made on the truck and I only make it because it is incredibly economical, tastes great and my husband loves it.
Serves 4
Spices: Ginger and Garlic (the basis to most dishes where I come from), Paprika, Cumin, Tarragon, chilli powder, Salt and Pepper
1/2 Lemon
3-4 Tablespoons of butter
Chopped steak (I cook and freeze mine at the house)
1 onion
1 can if Rotel
1 packet of small potatoes steamed ( I recommend using a steamer bag in microwave)
1 Tablespoon Cornstarch or flour
1 Pint of Cream (the large carton at walmart)

Cook for 3 minutes in microwave. 2)Empty the bag into a oven proof casserole dish or a baking pan (about 11X8). 3) Mix in Rotel and potatoes cream and cornstarch or flour. 4) Bake in oven at 350F for about 1 hour (or until the sauce thickens), stirring occasionally. 5) Serve over boiled rice or in Tortillas. |
